Make Ahead Frozen Meals Using Leftover Turkey??

So I defrosted a turkey yesterday and cooked it, and have tons of extra meat. I was looking to make some meals to have in the freezer for days that I dont want to cook. I have already done this before using a turkey enchilada recipe, but we are all tired of that, and want to try something else. Any ideas? THANKS!

Try some of the major recipe sites, & type in turkey–they will come up with tons of ideas for you!!
Make some Turkey a la King & freeze to serve later over biscuits or toast. .
Most any recipe that calls for chicken can be made with turkey. . I can’lt really give you recipes, because I tend to cook by mood & what’s available. .

Here are some of my favorites:
LEFTOVER SWEET & SOUR TURKEY
1 can Pineapple chunks
1/3 cup vinegar
¼ cup brown sugar
2 Tbs. cornstarch
½ tsp. salt
1 Tbs. soy sauce
2-1/2 cups diced cooked turkey
¾ cup green pepper strips
¼ cup thinly sliced onions
1. Drain pineapple, reserving juice.
2. Combine reserved juice, vinegar, brown sugar, cornstarch, soy sauce and salt in saucepan; mix well.
3. Simmer until thickened and clear, stirring constantly.
4. Remove from heat; stir in turkey.
5. Let stand for 10 minutes.
6. In a small bowl, combine green pepper and enough boiling water to cover; let stand for 5 minutes.
7. Drain green peppers and add to turkey mixture.
8. Add onions and pineapple chunks to turkey mixture; mixing lightly.
9. Heat thoroughly.
10. Serve over cooked rice.
Leftover Turkey Hash
3 tsp. oil
1 onion, chopped
2 cups cooked potatoes, diced
1 Tbs. dried parsley
2/3 cup chicken broth or leftover gravy
1-1/2 tbsp. unseasoned bread crumbs
Salt to taste
1. In skillet, heat oil 2 teaspoons of oil.
2. Add onions and sauté over medium heat until onions begin to brown
3. Stir in potatoes, turkey and parsley
4. Salt to taste
5. Preheat oven to 350 degrees.
6. Brush 9” to 10” round baking dish or cast iron skillet with 1 tsp oil.
7. Spoon in turkey mixture
8. Sprinkle with bread crumbs
9. Bake 30 to 40 minutes until top is browned.
TUNA TETRAZZINI
8-12 oz. pkg. broad noodles
3/4 cube butter
1 lg. onion, finely chopped
1 can cream of mushroom soup
1 can evaporated milk
2 sm. or 1 lg. can tuna, drained
1/3 c. grated Parmesan cheese
1 sm. can black olives, either chopped or pitted
2 1/2 oz. sliced mushrooms
1. Cook noodles in boiling water, do not cook until done, just until they are soft, about 7 minutes.
2. Drain, but do not run under water.
3. Sauté the onion until glazed in the butter.
4. Add the soup and evaporated milk, stir.
5. Then add the cheese, stir again.
6. Put in the mushrooms.
7. Break up the tuna into bite-size pieces and fold that into the rest of the ingredients, and warm everything up.
8. Add the olives, noodles, and mix gently.
9. Put mixture into a 1 1/2 or 2 quart casserole dish.
10. Sprinkle generously with Parmesan cheese.
11. Sprinkle with paprika.
12. Bake for 1 hour in a 375 degree oven. Do not cover.
Turkey & Dumpling Casserole
2 cups turkey gravy; leftover or canned
1 can mixed vegetables, drained
1 lb. (about 3 cups) cooked turkey, diced
½ tsp. ground sage
salt and pepper to taste
1 Tbs. dried parsley
1/3 cup flour
1 can biscuits
1. Combine vegetables, gravy, turkey and sage in a large pot.
2. Bring to simmer over low heat.
3. Season to taste with salt and pepper
4. Roll out biscuits on a flat, floured surface and cut into 1” x 2” pieces.
5. Drop biscuit squares into simmering stew.
6. Cover lightly and cook for 10 minutes.
7. Uncover and cook for additional 10 minutes.
8. Serve hot.
Turkey Biscuit Calzones
1 can biscuits
2 cups cooked turkey, diced
4 oz. Mozzarella cheese
½ tsp. garlic powder
¼ tsp. dried oregano
Black pepper to taste.
Olive oil
1. Preheat oven to 400 degrees.
2. Roll each biscuit into a 5” circle.
3. Mix all remaining ingredients except oil
4. Sprinkle 1/8th of mixture over half of each biscuit circle; leaving ½” of the edge clear.
5. Fold the other half of biscuit dough over filling to make a half-moon.
6. Use fork tines to press edges firmly together and seal.
7. Coat baking pan with cooking spray.
8. Arrange calzones in a single layer with sides not touching.
9. Brush tops with olive oil
10. Bake 10 to 12 minutes or until golden brown.
